Objectives of the Study


  1. To characterize the microbial diversity and composition of stored Kunu Aya from different production regions in Nigeria, using high-throughput sequencing and metagenomic analysis techniques.

  2. To investigate the impact of storage conditions, including temperature, humidity, and packaging materials, on the survival, growth, and metabolic activity of microbial populations in Kunu Aya.

  3. To assess the safety and quality of stored Kunu Aya by evaluating the presence of pathogenic microorganisms, spoilage indicators, and changes in sensory attributes and nutritional content over time.
